Why does a green ring appear around hard-boiled eggs?

You peel a hard-boiled egg, cut it in half, and notice a faint greenish-gray ring surrounding the bright yellow yolk. Although the unusual color might make you wonder whether something is wrong, there’s no need to panic. The ring is harmless and does not mean the egg has spoiled. Instead, it is simply the result of a natural chemical reaction that can occur during cooking.

The discoloration develops when sulfur in the egg white reacts with iron in the yolk. If an egg is cooked for too long or at a temperature that is too high, sulfur-containing compounds in the white can produce hydrogen sulfide. As this moves toward the yolk, it reacts with the iron and forms iron sulfide, creating the familiar greenish-gray ring. The egg is still safe to eat, although overcooking can sometimes affect its texture and flavor.

Fortunately, preventing the ring is fairly simple. Once the eggs are fully cooked, transfer them immediately into cold or ice water to stop the cooking process and help them cool quickly. Avoiding unnecessarily long cooking times can also help keep the yolks bright yellow and reduce the chance of the gray-green ring appearing.

While the color may look strange, there is nothing mysterious or dangerous about it. The greenish ring is simply an example of food chemistry taking place in your kitchen. Once you know what causes it, that unexpected change in color becomes much less concerning and is no reason by itself to throw the egg away.
