What You Should Never Cook in a Cast Iron Skillet (and Why)

Cast iron skillets are a favorite in many kitchens because they are durable, versatile, and can last for decades with proper care. They heat evenly, retain warmth exceptionally well, and are perfect for preparing foods such as steaks, cornbread, and roasted vegetables. Despite their rugged reputation, however, cast iron is not the best choice for every type of cooking.

One of the main things to avoid is cooking highly acidic foods for extended periods. Tomatoes, vinegar, wine, and citrus can gradually wear down the skillet’s protective seasoning and react with the iron. Although brief cooking is generally safe in a well-seasoned pan, long-simmering acidic dishes may leave food with a metallic taste and reduce the pan’s naturally nonstick surface.

Cast iron also requires careful handling to prevent damage. Delicate foods like eggs or flaky fish may stick if the seasoning is not well established. Leaving the pan to soak in water, storing food inside it, or exposing it to excess moisture can strip away the seasoning and encourage rust. Strongly flavored ingredients may leave lingering aromas, while pouring cold water into a hot skillet can create thermal stress that may eventually cause cracking or warping.

With regular maintenance, a cast iron skillet can remain one of the most reliable tools in the kitchen. Wash it gently, dry it completely after each use, and apply a light coating of oil to preserve the seasoning. By limiting prolonged exposure to acidic foods, moisture, and sudden temperature changes, you can keep the pan in excellent condition and enjoy dependable cooking performance for years.
