A pinch of salt in coffee is a tradition that has been passed down for generations, and there is genuine science behind the practice. Although it won’t completely change every cup, a very small amount of salt can help reduce bitterness and produce a smoother, more balanced flavor. This is especially useful when coffee has been over-extracted or when naturally bitter beans are used.

Salt doesn’t make coffee taste salty when used correctly. Instead, it works by reducing the tongue’s perception of bitterness, allowing the coffee’s natural flavors to stand out more clearly. The best approach is to add just a tiny pinch to the coffee grounds before brewing. If you can detect a salty taste, too much has been added, so starting with the smallest amount is always the safest option.

Many people also rely on traditional ingredients to enhance the flavor of their coffee. Spices such as cinnamon, cardamom, and nutmeg add warmth and aroma, while a small drop of vanilla extract provides a gentle sweetness without adding sugar. Although these additions do not reduce bitterness in the same way salt does, they can make a cup of coffee taste richer, smoother, and more aromatic.

Another old brewing tradition involves placing a clean eggshell in the coffee grounds to soften bitterness. While this method has historical roots, it is not commonly recommended today because raw eggshells may carry bacteria unless they have been thoroughly cleaned and heated. For a consistently better cup, it is generally safer to use fresh, high-quality beans, brew at the proper temperature, and add only a tiny pinch of salt if extra smoothness is desired.
