The Right Way to Sauce Pasta

Think you know how to make pasta? One of the most common mistakes is cooking the noodles, placing them on a plate, and simply pouring sauce over the top. While that technically gives you pasta with sauce, it misses an important step that can make a major difference in both texture and flavor. A better approach is to finish the pasta directly in a skillet with the hot sauce, allowing the noodles and sauce to blend together into one cohesive dish.

Begin by heating your sauce while cooking the pasta in well-salted water until it reaches an al dente texture. Avoid adding oil to the cooked pasta, as it can prevent the sauce from clinging properly to the noodles. Instead, transfer the pasta directly into the hot sauce and add a few tablespoons of the reserved pasta water. The starchy water is the key to creating a silky sauce because it loosens the mixture while helping the starch form a smooth coating around each strand.

For extra richness, add a little butter or extra-virgin olive oil, then continue cooking the pasta and sauce together over fairly high heat. Keep stirring and tossing the noodles while adding small amounts of pasta water as needed. As everything combines, the sauce should become creamy and cling beautifully to the pasta. Once you reach the desired consistency, remove the skillet from the heat and add grated cheese or fresh herbs. Taste the dish one final time and adjust the seasoning, pasta water, or olive oil if necessary.

Finally, transfer the pasta to a warm plate or bowl and serve it immediately. Pasta continues to absorb liquid as it sits, which means the sauce can quickly become thicker and the noodles softer. That’s why making great pasta isn’t only about preparing a flavorful sauce—it’s also about properly finishing the noodles in that sauce. Mastering this simple technique can make even a basic jarred sauce taste richer, silkier, and much more restaurant-worthy.
