Scallions, Green Onions, Spring Onions, and Chives Explained Simply

Although green onions, scallions, spring onions, and chives are often mistaken for one another because of their similar appearance, each has its own unique characteristics. Understanding how they differ makes it easier to select the best option for a recipe, whether you need a mild garnish, a flavorful cooking onion, or a delicate herb.

Green onions and scallions are simply two names for the same immature onion. They are harvested before a full bulb develops, leaving a slim white stem and long green leaves. The white section offers a slightly stronger onion flavor, while the green tops are milder and fresher. Since the entire plant is edible, it is commonly used in salads, soups, stir-fries, omelets, noodle dishes, and as a finishing garnish.

Spring onions are left to grow longer, allowing a small rounded bulb to form at the base. This extra maturity gives them a sweeter, fuller onion taste that is more pronounced than scallions but gentler than mature onions. Their bulbs are ideal for roasting, grilling, or sautéing, while the green stalks can be sliced and used in many of the same ways as green onions.

Chives belong to a different plant altogether and are classified as an herb rather than an onion. They produce thin, hollow leaves without forming a bulb and have a light, delicate onion flavor. Chives are best added just before serving to preserve their fresh taste, making them perfect for baked potatoes, scrambled eggs, soups, salads, dips, creamy sauces, and other dishes that benefit from a subtle onion accent.
