Safe to cook or throw out?

Opening a package of thawed chicken and noticing unusual purple or reddish patches can be unsettling, but the color alone does not necessarily mean the meat has spoiled. In many cases, these darker areas are related to pigments from the bone marrow. Freezing creates ice crystals that can affect the tissue around the bones, and as the chicken thaws, marrow pigments may seep into the surrounding meat. This is often more noticeable near softer or porous bones.

Another possible cause is myoglobin, a protein naturally found in muscle tissue that helps store oxygen. The freezing and thawing process can change how myoglobin appears, sometimes making parts of the chicken look darker red or purple. Since dark meat contains more myoglobin than white meat, variations in color can occur naturally and are not automatically a sign of spoilage.

What matters more is whether the chicken shows other warning signs. Spoiled chicken may have a strong sour or ammonia-like smell, a slimy or sticky surface, or unusual gray or green coloring. If the meat has been stored properly, smells normal, and remains firm rather than slimy, purple patches by themselves generally do not mean the chicken must be thrown away. However, if you are uncertain about how it was stored or whether it remained safely refrigerated, it is better to avoid the risk and discard it.

For safety, chicken should always be cooked to an internal temperature of 165°F (74°C). Thaw frozen chicken in the refrigerator or use the cold-water method instead of leaving it at room temperature. Purple discoloration may look concerning, but color is only one factor. Smell, texture, storage conditions, and proper cooking are much more useful when determining whether chicken is safe to eat.
