Safe to cook or throw out?

You open a package of thawed chicken, peel back the skin, and notice unusual purple blotches. It’s natural to wonder whether it’s still safe to cook or if it should be thrown away. While unexpected colors can be concerning—especially with poultry, which is often associated with foodborne illness—purple patches are frequently harmless. Knowing why they appear can help you make a more informed decision.

One common reason is bone marrow leakage. During freezing, ice crystals can damage the bones, allowing pigments from the marrow to seep into the surrounding meat as the chicken thaws. This is especially common in younger chickens because their bones are softer and more porous. Another possible cause is myoglobin, a protein in muscle tissue that stores oxygen. Freezing and thawing can alter how myoglobin appears, creating darker or purplish areas, particularly in dark meat, which naturally contains more of this pigment.

In many cases, these color changes do not mean the chicken has spoiled. Harmless purple spots are usually confined to specific areas and are not accompanied by other signs of spoilage. Chicken that has gone bad is more likely to have a sour or ammonia-like odor, a slimy or sticky texture, gray or green discoloration, or excessive moisture. If the meat smells fresh, feels firm, and has been stored properly, it is often still safe to cook. If you are ever unsure, it is safest to discard it.

If you decide to cook chicken with purple blotches, make sure it reaches an internal temperature of 165°F (74°C). You can trim away especially dark areas if you prefer, though it is not usually necessary. To reduce food safety risks, always thaw chicken in the refrigerator or by using the cold water method rather than leaving it on the counter. While purple patches may look alarming, smell, texture, and proper storage are the most reliable indicators of whether chicken is safe to eat.
